Allow the cabbage to slightly undercook than drain the cabbage completely and add a quarter stick of butter to the drained cabbage. Allow the butter to melt into the cabbage but not on burner for five minutes.

Add 1/2 stick of butter into the cooked and drained potatoes and mix with the chopped scallions. Mash the potatoes with a cup of the milk or cream and than add the cabbage into the potato mixture.

Once everything is mixed together add the remaining butter into the mixture and place a handful of chives on top.
